End of year Holidays
Because of the great demand during the Holidays of the end of the year, we recommend you to order your products as soon as possible, so as to avoid any.As for the others, ( for instance the foie gras stuffed magret ( duck breast ), we shall reseve your order at the producer's and send it to you a few weeks before the holidays, or at any other date you will specify in the "remarks" room that appears in the end of the ordering process.
The "Foie Gras"
- Remove from fridge 20 min before serving.

Cut it with a butter cutting thread.If you have not use a very thin and toothless knife you first dip into warm water and wipe after each cutting.

Serve it on a cooled plate, with a compote of dry fruits, of redcurrant or with a gelly.Avoid salads with too much mustard or vinegar.

The canned "foie gras", as wine, gets better with time.Anyway watch the best before date written on the tin can or the jar.

Perfect with a Sauternes or a Monbazillac ( sold in this website ), it is also good with a red wine or a Champagne.Just a question of taste !
Magrets et confits ( duck breasts and conserves ).
- The magrets must be served with their skin.

The conserve:legs, wings with their linked breast, "aiguillette", "manchon", gizzard and heart.The fat used for cooking must be of the same specie exclusively.
